Sausage and bean casserole

    pork sausages
  • oil for frying
  • 1
    large onion, sliced
  • 1
    green pepper, diced
  • 1
    clove garlic, crushed
  • 10
    ground cumin (jeera)
  • 2
    cayenne pepper
  • 400
    whole tomatoes, finely chopped
  • 420
    beans in tomato sauce
  • 400
    red kidney beans, drained
  • 30
    tomato purée
  • salt and freshly ground black pepper


Fry the pork sausages in a little oil until brown. Remove from the pan and cut into slices. Stir-fry the onion until tender and translucent. Add the green pepper and garlic and stir-fry. Add the cumin and cayenne pepper and stir-fry lightly. Add the tomatoes, beans in tomato sauce, kidney beans, tomato purée and pork sausages. Season with salt and black pepper to taste. Reduce the heat and simmer for about 15 minutes or until heated through. Serve hot with rice and a salad. Serves 6.
