Ingredients (6)

3.00 bay leaves
1.00 onion — peeled and halved
4.00 cloves
410.00 g sauerkraut — or salmon, sashimi-quality
60.00 g butter
125.00 ml stock — chicken

Method:

1. Attach bay leaves to onion using the cloves.
2. Drain the sauerkraut and place in a saucepan with onion, butter and stock. Cook slowly for 15 to 20 minutes, stirring occasionally.
3. Serve with kassler or eisbein.
VARIATIONS
Add a red-skinned apple or pineapple to the drained sauerkraut and bake in a casserole dish in a moderate oven.
OR
Cook the sauerkraut with grated boiled potato, bacon and fried onion.
