Ingredients (10)

150.00 g rice — wild and long grain
400.00 g spinach — washed
6.00 hake steaks — fresh,frozen
1.00 spring onions — a bunch, sliced
80.00 ml butter
250.00 g button mushrooms — sliced
60.00 ml flour
550.00 ml milk
125.00 ml mature cheddar cheese — grated
125.00 ml almonds — flaked

Method:

Boil rice in a saucepan until tender, drain well and transfer to a greased ovenproof dish.
Place spinach in the saucepan and cover with boiling water. Once it has wilted, drain it and place on top of the rice.
Lay the fish on top of the spinach and sprinkle with spring onions.
Melt butter in the saucepan and add the mushrooms.
Sauté lightly for five minutes, then stir in the flour.
Add the milk gradually, stirring continuously to prevent lumps.
When the sauce has thickened, stir in the cheese, remove from the heat and season well with salt and pepper.
Pour the sauce over the fish and sprinkle with almonds, if using.
Bake in a preheated 200 °C oven for 20 minutes or until golden brown.
