Sardines with olive and lemon

    sardines, cleaned and gutted
  • 1
    large red pepper, deseeded and cubed
  • 1
    red onion, sliced
  • 2
    fat cloves garlic, sliced
  • 2
    fresh or dried bay leaves
  • 190
    lemon juice
  • 45
    olive oil
  • 12
    Calamata-style olives, depipped and halved
  • milled pepper
  • 10
    Italian parsley, roughly chopped


Arrange sardines, peppers, onion and garlic in a shallow, ovenproof dish.
Mix the remaining ingredients together and pour over fish and vegetables.
Bake in a 200 °C oven for 15 to 20 minutes.
Remove from oven, scatter with parsley and serve with crusty bread or rice and a green salad.
