Ingredients (10)

12.00 sardines — gutted
1.00 red pepper — cubed
1.00 red onion — sliced
2.00 garlic — large cloves, sliced
2.00 bay leaves — fresh or dried
190.00 ml lemon juice
45.00 ml fresh chillies — 573
12.00 olives — pitted, halved
0.00 freshly ground black pepper
10.00 ml fresh Italian parsley — roughly chopped

Method:

Arrange sardines, peppers, onion and garlic in a shallow, ovenproof dish.
Mix the remaining ingredients together and pour over fish and vegetables.
Bake in a 200 °C oven for 15 to 20 minutes.
Remove from oven, scatter with parsley and serve with crusty bread or rice and a green salad.
