Sardine surprise

    sardines, drained
  • 1
    tomato, diced
  • 1
    small onion, finely chopped
  • 250
    Cheddar cheese, grated
  • salt and pepper to taste

    slices bread, buttered


Lightly flake the sardines and mix with the remaining filling ingredients. Spoon the filling on top of six slices of bread and cover with the remaining six slices. Toast in a snackwich machine until brown on both sides. Serve hot. Makes 6 sandwiches or 12 triangles.
