Sardine omelette

  • 3
  • salt and black pepper to taste
  • chopped chives (optional)


Drain the sardines and fry lightly in a pan in a little of their own oil. Whisk the eggs and seasonings together and pour over the sardines. Sprinkle with chopped chives and heat slowly till the egg mixture has set. Serve with bread. Serves 2-3.
