Sandwich spread

    English cucumber, finely grated or chopped
  • 1
    onion, finely chopped
  • 3
    medium-sized carrots, finely grated
  • 2
    small green peppers, finely chopped
  • 2
    small red peppers, finely chopped
  • 750
    white grape vinegar
  • 500


Blend all the vegetables together in a mixing bowl. Pour over the vinegar and leave for 24 hours. Drain the vegetables well and press out all the liquid. (Reserve the vinegar for making salad dressing.) Blend the vegetables with just enough mayonnaise to form a spread. Spoon the sandwich spread into clean, sterilised glass jars, close tightly and store in the fridge until needed. Makes about 800 ml of spread.
