Ingredients (8)

250.00 g samp
250.00 g butter beans — dried
250.00 g peanuts — unsalted
water
3.00 stock cube — chicken
salt and freshly ground black pepper — to taste
125.00 ml milk — powder, skim
75.00 g margarine

Method:

1. Cover samp and beans with water and soak overnight.
2. Place samp, beans and nuts in large saucepan and cover completely with water. Add crumbled stock cubes. Bring to the boil and then simmer for three hours adding more water if samp gets dry.
3. Season with salt and pepper, add milk powder and margarine, toss together or mash with a wooden spoon.
