Ingredients (12)

1.00 kg samp and bean mix — rinsed and soaked overnight
salt
ONION MIXTURE
2.00 onion — sliced
2.00 garlic — cloves, crushed
2.00 ml cloves — whole
5.00 ml allspice
oil
2.00 ml nutmeg — ground
freshly ground black pepper
15.00 ml curry powder
5.00 ml cumin — ground
5.00 ml coriander — ground

Method:

Prepare the samp mixture as described in the basic recipe. Add the curry seasonings when preparing the onion mixture and stir-fry for about 1 minute. Add the onion mixture to the samp mix and simmer until the samp is soft. Serve hot with meat and dried fruit, if desired.
Serves 10-12.
