Ingredients (13)

oil
400.00 g beef — stewing, cubed
500.00 g marrow bones
500.00 g samp and bean mix — soaked overnight
2.00 onion — finely chopped
1.00 cabbage — head, shredded
2.00 garlic — cloves, finely chopped
30.00 ml Worcestershire sauce
30.00 ml soy sauce
125.00 ml wine — white
salt and freshly ground black pepper — to taste
1.00 lemon — zest only
1.00 fresh parsley — handful, chopped

Method:

Brown the meat and marrow bones in a little oil. Add a cupful of water to the water in which the same and beans were soaked and add all this to the stewing beef. Cover and simmer for about an hour or until the samp, beans and meat are cooked. Meanwhile sauté the onions, cabbage and garlic in a little oil until tender. Add the Worcestershire sauce, soy sauce and white wine and add everything to the samp mixture 10 minutes before the end of the cooking time. Season generously with salt and freshly ground pepper and stir in the lemon rind and parsley just before serving. Serve hot with freshly baked brown bread.
Serves 6-8.
