Salt fish

  • 800
    whole white fish (kingklip or hake)
  • 400
    coarse sea salt


1. Remove the scales and clean the fish. Leave the head on where possible.
2. Spread a thin layer of salt on the bottom of an ovenproof dish, place the fish on top and cover with salt.
3. Bake at 200 ºC for about 35 minutes. Break the hard salt crust and lift it off.
4. Serve the fish with salsa verde separately.
