60.00 ml fresh parsley — chopped
4.00 anchovy fillets
45.00 ml fresh chillies — 573
10.00 ml mustard
15.00 ml capers — chopped
15.00 ml lemon juice
15.00 ml vinegar — white wine

Purée all ingredients in a food processor or blender and serve with pickled brisket (see recipe).
