Salmon with tomatoes and peppers

  • 4
    salmon fillets (about 150 g each)
  • salt and pepper
  • lemon juice
  • 4

    red pepper
  • 1
    yellow pepper
  • 4

    lemon juice
  • salt and pepper
  • 60
    olive oil
  • finely chopped parsley


Preheat oven to 200 °C and keep a baking tray ready.
Season fish with salt, pepper and lemon juice and place on the baking tray.
Place the tray in the centre of the oven and bake for 10 to 15 minutes, depending on the thickness of the fish.
Seed and dice the tomatoes and pepper.
Chop the chives and add.
Pour the lemon juice into a bowl, add a little salt and pepper and beat in the oil.
Add the tomato mixture and mix lightly.
Spoon the salad over the fish and scatter the parsley on top.
Serve with mashed potatoes and steamed spinach.
