Salmon with sour cream sauce

    olive oil

    cloves garlic, crushed

    ground cumin (jeera)
  • 4
    fresh salmon fillets
  • salt and freshly ground black pepper
  • 60
    capers, roughly chopped
  • 30
    freshly chopped parsley
  • 300
    sour cream
  • a few fresh coriander leaves, finely chopped (optional)


Heat the butter and olive oil in a large frying pan and stir-fry the garlic and cumin for about one minute. Season the salmon fillets with salt and pepper and fry one by one in the butter mixture on both sides until done. Remove from the pan and keep warm. Add the capers and parsley to the remaining butter mixture in the pan and stir-fry lightly. Spoon a little over each salmon fillet. Add the sour cream and simmer until the sauce thickens slightly. Serve immediately with the salmon. Sprinkle with a few fresh coriander leaves if desired. Serves 4.
