Salmon with sour cream sauce

Ingredients (10)

30.00 ml butter
15.00 ml fresh chillies — 573
2.00 garlic — cloves, crushed
5.00 ml cumin — ground
4.00 salmon — fillets
sea salt and freshly ground black pepper
60.00 ml capers — roughly chopped
30.00 ml fresh parsley — chopped
300.00 ml sour cream
fresh coriander — finely chopped

Method:

Heat the butter and olive oil in a large frying pan and stir-fry the garlic and cumin for about one minute. Season the salmon fillets with salt and pepper and fry one by one in the butter mixture on both sides until done. Remove from the pan and keep warm. Add the capers and parsley to the remaining butter mixture in the pan and stir-fry lightly. Spoon a little over each salmon fillet. Add the sour cream and simmer until the sauce thickens slightly. Serve immediately with the salmon. Sprinkle with a few fresh coriander leaves if desired.
