Ingredients (7)

250.00 ml watercress
500.00 ml rocket
250.00 g salmon — smoked pieces
200.00 g feta cheese — chopped
60.00 ml vinegar — white balsamic
4.00 fresh thyme
90.00 ml fresh chillies — 573

Method:

Arrange the salad leaves on a plate or platter, and top with salmon and feta chunks. Add any other ingredients you like.
In a saucepan, simmer balsamic vinegar and thyme on a low heat until reduced by half. Leave to cool, then whisk in the olive oil.
Drizzle over the salad and serve with fresh bread.
