Ingredients (13)

250 ml flour — cake
250 ml cheddar cheese — grated
125 g butter
FILLING:
15 ml butter
1 bunch spring onions
2 cloves garlic — cloves, crushed
100 g green beans — fine, trimmed, chopped
1 can pink salmon — flaked
3 eggs — large
125 ml milk
250 ml cream — fresh
15 ml lemon juice
cheddar cheese — grated, to sprinkle

Method:

Preheat the oven to 160°C.

Pastry:
Blend the cake flour, cheese and butter in a food processor just until it comes together to form a dough. Press into a 24cm quiche tin.

Filling:
Heat the butter in a heavy-based saucepan. Once the butter has melted, lightly saute´ the spring onions, garlic and green beans. Mix in the salmon, then spoon the mixture into the pastry base.

Beat the eggs, milk, cream and lemon juice, and season to taste. Pour over the filling in the pastry base and sprinkle with cheese, if you prefer.

Bake in a preheated oven for 45 minutes or until set.
