Salmon from the north

  • 1
    fresh salmon fillets, cut into 3 cm thick strips
  • 250
    cake flour
  • 200
    olive oil
  • 3
    onions, sliced
  • salt and freshly ground black pepper
  • 1
    bay leaf
  • 100
    white vinegar or apple cider vinegar


Roll the fish strips in the flour to coat them. Heat half the olive oil in a pan and fry the salmon for 5 to 8 minutes or until just done. Remove the fish from the pan and keep warm.
Heat the remaining olive oil in a saucepan, add the onions, salt,pepper and bay leaf and sauté until the onions are soft. Add the vinegar.
Serve the salmon with the onion sauce and chips or boiled potatoes.
