Ingredients (12)

1.00 cucumber — English variety, shavings
100.00 g daikon — shavings
30.00 ml lime juice
30.00 ml mirin
5.00 ml fresh chillies — minced
5.00 ml sugar
250.00 g salmon — diced
1.00 avocado — diced
40.00 ml ginger — pickled
sheets of seaweed — thin strips
sesame seeds — black, to garnish
fresh mint — to garnish

Method:

Toss cucumber and daikon with lime juice, mirin, chilli and sugar. Divide between 4 bowls.
Top with salmon, avocado, pickled ginger and seaweed. Garnish with sesame seeds and mint leaves and serve.
