500.00 g potatoes — Mediterranean
250.00 g cherry tomatoes
4.00 fresh rosemary
30.00 ml olyfolie
4.00 salmon fillets
4.00 anchovy fillets
450.00 ml white wine
1.00 pinch salt and freshly ground black pepper

Method:

Verhit jou oond tot 200 °C. Skil die aartappels en kook tot net gaar – die aartappels moet nog ferm wees. Sny nou die aartappels in die lengte in skywe van sowat 5 mm dik. Gooi olyfolie in ‘n bakplaat en sit die aartappels en tamaties bo-op. Sit die vars roosmaryntakkies bo-op en geur met sout en vars gemaalde swartpeper. Plaas daarna die salm-filette op die aartappels, asook 1 ansjovis-filet bo-op elke stuk salm. Geur met vars gemaalde swartpeper en sprinkel nog ‘n bietjie olyfolie oor. Sit dit in ‘n warm oond vir 6 minute. Haal uit en voeg die wyn by en bak vir nog 6 minute.
