Salami quiche

  • 1
    baked basic pastry shell for quiches (see recipe), seasoned with Parmesan cheese
  • 15

    onions, chopped
  • 3
    extra-large eggs
  • 150
    natural yoghurt
  • pinch dried basil
  • pinch dried origanum
  • 150
    salami, (skin removed), diced
  • 50
    mozzarella cheese, grated


Preheat the oven to 190 ºC (375 ºF). Heat the oil in a pan and sauté the onion until soft. Transfer to the baked pastry shell. Beat the eggs, yoghurt and seasonings and pour over the onion in the baked pastry shell. Sprinkle the salami dice around the edge of the tart and the cheese in the centre. Bake for 35 minutes or until the filling is done. Makes about 12 slices.
