Salami and potatoes in phyllo pastry

    onion, sliced into rings

Preheat the oven to 180 ºC (350 ºF). Spray an oven dish with non-stick spray. Boil the potato slices in salted water until nearly tender. Brush each sheet of phyllo pastry with melted butter and stack on top of each other. Line the oven dish with the pastry, folding it neatly around the edges of the dish. Arrange the potato slices, onion rings and salami slices on top of the phyllo pastry. Whisk the cream and eggs together and season to taste with salt and pepper. Pour over the potato mixture in the dish and bake for 40 minutes or until set. Serve hot. Serves 6-8.
