Salad platter

  • a few lettuce leaves, broken into pieces
  • 1
    tomato, sliced
  • leftover potato salad, about 100 ml
  • 1
    hard-boiled egg, cut into wedges
  • 2
    sardines, drained
  • 1
    small onion, sliced into rings or 1 spring onion, coarsely chopped
  • salt and pepper to taste
  • mayonnaise


Sprinkle the lettuce leaf pieces on a platter and arrange the tomato slices on them. Top with the potato salad. Surround with the hard-boiled egg wedges and place the sardines on top of the potato salad. Sprinkle with the onion rings or chopped spring onion. Season with salt and pepper to taste and serve with dollops of mayonnaise. Serve immediately or chill till needed. Serves 1.
