Ingredients (11)

10.00 peaches — dried halves, soaked
10.00 nectarines — dried halves, soaked
6.00 guavas — peeled
4.00 orange — segments
115.00 g granadillas — pulp
SYRUP
500.00 ml water
250.00 g sugar
5.00 ml vanilla — essence
2.00 ml almond essence
10.00 ml orange — peel, julienned
1.00 cinnamon — stick

Method:

SYRUP: Bring water, sugar, vanilla essence, almond essence, orange peel and cinnamon to boil.
Drain dried fruit, slice and add to syrup. Simmer until softened, then remove from stove and chill thoroughly.
Halve guavas, remove pips and slice into crescents. Arrange guavas and oranges segments on a platter, spoon sliced dried fruit and syrup over. Sprinkle with granadilla pulp and chill well.
Decorate with mint or lemon verbena and serve with thick cream.
