Ingredients (9)

40.00 ml brown sugar
1.00 lemon — zest and juice
75.00 ml sunflower oil
30.00 ml lemon juice
1.00 fresh chillies
2.00 garlic — cloves, crushed
2.00 ml castor sugar
400.00 g calamari — rings
30.00 g rocket

Method:

Heat brown sugar and 15 ml water together in a saucepan. Add lemon slices and allow to simmer on both sides for 5 minutes. Remove from the saucepan, cut each slice in half and set aside.
To make the dressing, place 60 ml oil, lemon juice, chilli, garlic and castor sugar in a food processor and liquidise to blend well.
Heat remaining oil in a heavy-based frying pan until smoking. Add calamari rings and stir-fry for 30 seconds. Remove from heat.
Divide rocket between 4 plates. Top with calamari and lemon slices. Drizzle with dressing, season with salt to taste and serve immediately.
Serves 4.
