Sage and cream jacket potatoes

  • 6
    baking potatoes
  • vegetable oil
  • salt
  • 150
    thick sour cream
  • fresh sage leaves, chopped


1. Scrub potatoes clean and brush with oil and salt. Prick with a skewer. Wrap potatoes separately in heavy aluminium foil and bake in hot coals for 45 minutes, turning occasionally, until soft. Open up the foil and cut a deep cross in each potato, squeeze sides to open out. 2. Mix sour cream and chopped sage leaves together. Spoon into each potato.
