Ingredients (13)

125.00 g dates — pitted, chopped
5.00 ml Bicarbonate of soda
125.00 g butter
200.00 g sugar
2.00 eggs — large, beaten
240.00 g flour — cake
1.00 ml salt
5.00 ml Baking powder
125.00 g raisins — seedless
50.00 g mixed nuts — chopped
SYRUP
15.00 ml butter
200.00 g sugar
100.00 ml rum

Method:

1. Place dates in a glass bowl. Add bicarbonate of soda and stir in 250 ml boiling water. Leave to cool.
2. Cream together butter and sugar. Add eggs and beat until smooth. Fold in flour, salt and baking powder. Fold in date mixture along with raisins and nuts. Mix until well combined and pour into a greased ovenproof dish.
3. Bake in preheated 180 ºC oven for 40 minutes or until firm.
4. SAUCE: Heat butter, sugar and 150 ml water until sugar has dissolved. Allow to simmer for five minutes, then remove from the heat and add the rum. Pour over the pudding as soon as it comes out of the oven. Serve warm or cold with vanilla ice cream or custard.
