Round picnic loaf

  • 1
    round or oval loaf
  • butter
  • 6
    slices ham, diced
  • 2
    extra-large hard-boiled eggs, sliced
  • about a quarter cucumber, sliced and quartered
  • 1
    small yellow pepper, diced
  • 1
    small onion, finely chopped
  • 8
    black or green olives, halved
  • 25
    olive oil
  • 25
    balsamic vinegar


Slice off the top of the round loaf, and hollow out and butter the inside of the loaf. Mix the ham, eggs, cucumber, pepper, onion and olives in a mixing bowl. Blend the olive oil and balsamic vinegar. Sprinkle over the ham mixture. Spoon the filling into the hollowed out loaf. Return the lid and secure with a piece of string if desired. Cut into slices.
