Ingredients (8)

FILLING
90.00 g breadcrumbs — fresh
15.00 ml fresh parsley — chopped
1.00 onion — small, very finely chopped
1.00 apples — green, peeled and cubed
1.00 lemon — zest and juice
125.00 ml milk
salt and freshly ground black pepper — to taste
2.00 kg pork ribs — excess fat removed and deboned

Method:

Preheat oven to 160 ºC (325 ºF).
Combine all the ingredients for the filling.
Spoon the filling on the meat side of the deboned pork rib, roll it up and secure firmly with a piece of string.
Place the roll in an oven pan and roast for 1 hour 40 minutes or until the meat is tender and done.
Leave the meat to rest in the warming drawer for about 10 minutes before carving it.
Prepare a flavoursome gravy from the pan juices and serve with the meat.
