Ingredients (6)

500.00 ml rocket
2.00 cloves garlic — cloves
60.00 ml walnuts
180.00 ml parmesan cheese
180.00 ml fresh chillies — 573
5.00 ml lemon juice — fresh

Method:

1. Place all the ingredients (apart
from the olive oil and lemon
juice) in a food processor and
purée to form a fine paste. Slowly
add the olive oil in a thin stream
while the machine is running.
Add the lemon juice once all the
oil has been added. Place the
pesto in a container and store it
in the refrigerator until required.
Makes: 375ml
