Ingredients (12)

5.00 red onion — quartered
175.00 ml fresh chillies — 573
30.00 ml vinegar — red wine
275.00 g bread — ciabatta
150.00 g green beans
60.00 g rocket
60.00 g olives
100.00 g strawberries — quartered
40.00 ml capers
Garlic salad dressing: red wine vinegar
1.00 garlic — cloves, crushed
60.00 ml fresh chillies — 573
5.00 ml salt and freshly ground black pepper — to taste

Method:

Oven temperature: 180°C

1. Prepare the garlic salad dressing:
Combine all the ingredients and
season to taste with salt and black
pepper. Keep aside until needed.

2. Preheat the oven to 180°C.
Place the onion on a baking tray
and drizzle 30ml olive oil and the
red wine vinegar over. Place in
the oven for about 30 minutes or
until soft.

3. Cut the ciabatta into 2,5cm
cubes and drizzle the remaining
olive oil over. Mix thoroughly
and spread the bread cubes on
a baking tray. Place in the oven
and bake for 10-15 minutes
or until golden brown. Shake
the baking tray from time to
time. Drain the bread cubes on
kitchen towel and season.

4. Cook the beans in salted water
until just soft but still crisp. Drain
the beans and refresh under cold
water. Cut them in half diagonally.

5. Place all the ingredients
in a mixing bowl. Pour
the salad dressing over.
Serve immediately.
