Rocket and pistachio pesto

Ingredients (5)

2 garlic — cloves
100 g pistachios, shelled — 60g without shells
60 g rocket
40 g parmesan cheese — grated
250 ml avocado oil

Method:

Grind the garlic to a paste with a little salt. Place the nuts in a food processor and pulse until fine. Add rocket and pulse to a coarse paste. Scrape out into a bowl, and stir in the garlic, Parmesan cheese and oil. Taste and season if necessary. Stir the pesto into warm, cooked pasta, or spread on bruchetta.
