Rocket and mushroom starter

  • seasoning
  • 10
    Dijon mustard
  • 1
    clove garlic, crushed
  • 45
    olive oil
  • 500
    rocket leaves
  • 500
    spinach leaves
  • 8
    large fresh black mushrooms
  • 250
    rocket flowers
  • 30
    white grape or wine vinegar


Put the vinegar, seasoning, mustard and garlic in a bowl. Mix well, gradually adding the olive oil to make a slightly thicker dressing. Leave to stand so that the flavours can blend. Place the rocket and spinach leaves on 4 individual glass plates. Place 2 mushrooms on each nest of leaves, stalk up. Gently pour the dressing over the mushrooms so that it penetrates deep into the gills. Sprinkle with rocket flowers and serve with Melba toast. Serves 4.
