Rocket and Parmesan salad

Ingredients 8
Servings 6


  • 1 packet rocket, washed
  • 1 packet watercress, washed
  • 1 packet butter lettuce, washed
  • a big wedge of Parmesan
  • extra virgin olive oil
  • salt
  • freshly ground black pepper
  • 125 ml toasted seed mix


Make sure the salad leaves are dried well.
Toss them together in a large bowl.
Just before serving pour in some olive oil - as much as you like.
With your hands, coat the leaves well with the oil.Season
Layer the leaves onto plates in big piles.
Carefully cut thin slices off the Parmesan wedge.
Layer about 4 slices on top of the leaves and sprinkle with nuts.
