600.00 g flour — self-raising
5.00 ml Baking powder
2.00 ml nutmeg — ground
2.00 ml mixed spice — ground
300.00 g margarine
300.00 g white sugar
250.00 ml currants
150.00 ml mixed citrus peel
2.00 eggs
50.00 ml milk
2.00 ml salt

Method:

Preheat the oven to 200 ºC (400 ºF). Grease a few baking trays. Sift the dry ingredients together. Rub in the margarine until the mixture resembles breadcrumbs. Add the sugar, currants and citrus peel and mix well. Beat the eggs and milk together and add to the mixture. Mix well. The mixture must be stiff enough to retain its shape while baking.
Shape into small mounds and arrange on the prepared baking trays. Bake for about 15 minutes until pale brown on top, taking care that the rock cakes do not burn underneath. Cool slightly on the baking trays before turning out onto a wire rack to cool completely.
Makes 35 rock cakes.
