Ingredients (9)

225.00 g flour
0.00 salt — just a pinch
5.00 ml mixed spice — ground
100.00 g butter
1.00 eggs
30.00 ml milk
75.00 g brown sugar
50.00 g raisins
0.50 lemon — zest and juice

Method:

Preheat the oven to 190 &degC.
Sieve together the flour, salt and mixed spice.
Rub the butter into the dry ingredients.
Beat the egg together with the milk and sugar.
Add egg-and-milk mixture to the flour mixture.
Stir in the raisins and lemon rind.
Form the dough into rock-like shapes, place on a greased baking tray and bake for 15 minutes.
