Roasted exotic tomatoes with goat’s cheese and mozzarella

Ingredients (9)

2 packs of baby exotic
1 ciabatta
3 garlic — cloves
mozzarella cheese
goat's milk cheese
salt and freshly ground black pepper
butter
fresh chillies — 573
honey

Method:

Preheat you oven to 180°C.

Roughly chop the tomatoes to whatever shapes and sizes suit you. Place the tomatoes in a roasting tray and season with lots of salt, pepper and a dash of olive oil. Mix tomatoes around and sprinkle small chunks of goats cheese and mozzarella all around. Finish by adding 2 crushed garlic cloves and add a thin stream of honey all over the top of the tomatoes. Place in the oven until tomatoes are soft and cheese is melted.

Slice the ciabatta 1cm thick. Butter one side of each slice, place in roasting tray and season with salt, pepper, a dash of olive oil and finish by sprinkling the finely chopped garlic all over.

When you remove the tomatoes, place the ciabatta in the oven and grill until golden and crisp.
