Ingredients (15)

14.00 pancetta — sliced
1.00 kg turkey — breast
15.00 ml butter
30.00 ml olive oil — for roasting
0.00 sea salt and freshly ground black pepper
SALAD
1.00 butter beans — tinned
250.00 ml green olives
0.50 cucumber — sliced
4.00 tomatoes — quartered
1.00 fresh Italian parsley — handful, chopped
30.00 ml vinegar — red wine
4.00 garlic — cloves, chopped
10.00 ml wholegrain mustard
30.00 ml olive oil — extra virgin
0.00 sea salt and freshly ground black pepper

Method:

Preheat the oven to 180 &degC.
Wrap pancetta around the turkey breast, covering the entire surface.
Place on a roasting rack in a roasting tray, dot with butter and pour over olive oil. Season.
Place in the oven and roast for about 45 minutes.
Remove and leave to rest for five minutes before slicing it.
SALAD: Combine all the ingredients.
