Roast tomato, chilli and balsamic relish

    ripe tomatoes, halved

    onion, chopped
  • 3
    (or more) red chillies, seeded and chopped
  • 30
    olive oil
  • 45
    balsamic vinegar
  • cracked black pepper
  • 15

  • 125
    balsamic vinegar
  • 30
    brown sugar
  • salt to taste


Preheat oven to 200 °C.
Place the tomatoes, flesh-side up, as well as the onion and chillies on a baking tray, drizzle with olive oil and balsamic vinegar and sprinkle with black pepper.
Roast for 30 minutes or until the tomatoes are soft.
Purée, then add the sugar and salt and pour everything into a pan and simmer for 15 minutes.
Serve with crispy onion rolls and hot sausage (bratwurst).
