Ingredients (8)

4.00 lamb — saddle
3.00 ml paprika
2.00 garlic — cloves, crushed
15.00 ml coriander — seeds, ground
5.00 ml fresh ginger — grated
0.00 freshly ground black pepper — to taste
10.00 ml fresh chillies — 573
0.00 salt — to taste

Method:

Remove the hard fatty layer of each saddle of lamb.
Blend the paprika, garlic, coriander, ginger, pepper and olive oil and spread the mixture over the meat.
Marinate the meat at room temperature for 60 minutes.
Meanwhile preheat the oven to 210 &degC.
Roast the meat for 20 to 35 minutes depending on the preferred degree of doneness.
Sprinkle the saddles with salt and stand for five minutes before serving either whole or carved into cutlets.
