Ingredients (12)

1.00 kg pork fillet
6.00 garlic — cloves, chopped
30.00 ml wholegrain mustard
100.00 ml fresh chillies — 573
salt and freshly ground black pepper
SAUCE
400.00 g youngberries — or loganberries
75.00 ml vinegar — malt
50.00 g sugar — dark brown
2.00 ml cinnamon — ground
125.00 ml port
20.00 ml cornflour
60.00 ml water

Method:

Preheat oven to 200 ºC.
Place fillet in a roasting pan. Rub with garlic, mustard, olive oil and seasoning. Roast for 20 minutes, or until done to taste.
Carve and serve with sauce and baby marrows.
SAUCE: Place all ingredients except cornflour and water in a saucepan. Simmer until fruit has softened and liquid has reduced slightly.
Mix comflour to a paste with water. Stir into berry mixture and boil for about 2 minutes, or until thickened and clear.
