Roast fruit with ice cream

  • 6
    peaches or nectarines
  • 40
    lemon juice
  • 100
    castor sugar
  • 25
    brandy (optional)
  • vanilla ice cream, to serve


Place the fruit in a bowl and cover with boiling water. Leave for 30 seconds, then drain and cover with cold water. Drain, then peel off the skins. Cut in half and remove the pip. Place the fruit in a roasting pan and drizzle with the lemon juice. Sprinkle with castor sugar, then roast in a preheated 190 ºC oven for 15 to 20 minutes until tender. Remove from oven. Drizzle with brandy and serve with a spoonful of ice cream.
