Ingredients (7)

1.00 chicken — whole
1.00 lemon — small
250.00 g bacon — streaky, rindless
10.00 patty pans — yellow
300.00 g pumpkin — peeled, cubed
2.00 fresh thyme — and rosemary
230.00 ml orange juice — fresh

Method:

Preheat oven to 200 ºC. Wash the chicken. Cut the lemon in half and place pieces inside the chicken cavity. Tie the legs together with string. Place chicken in a roasting pan. Layer strips of bacon over the chicken. Scatter patty pans, pumpkin cubes and sprigs of herbs around chicken. Pour orange juice over chicken and vegetables. Sprinkle with salt and freshly ground pepper, to taste.
Roast in the oven for 1 hour. Check the chicken and if the bacon is browning too quickly, cover with a piece of aluminium foil (shiny side out). Roast for a further 20-40 minutes, or until chicken is cooked through. Serves 4-6.
