Ingredients (6)

8.00 carrots — peeled and sliced
8.00 apricots — fresh, halved and stoned
50.00 ml honey
salt and freshly ground black pepper — to taste
200.00 ml orange juice
15.00 ml margarine

Method:

Place all ingredients in a 20-22 cm diameter ovenproof dish
Roast at 200 ºC for 30 minutes, or until golden. (Carrots will still be slightly crisp.)
