Roast baby chickens

  • 4
    baby chickens (about 350 g each)
  • salt and freshly ground black pepper
  • 2
    oranges, roughly chopped
  • 125
    ginger preserve with generous amount of syrup
  • 250
    orange juice


Preheat the oven to 230 °C.
Season the chickens with salt and pepper.
Combine the oranges and ginger (reserve a little syrup) and fill the chicken cavities with the mixture.
Truss the chickens with string or raffia and place in a roasting pan.
Mix the reserved ginger syrup and the orange juice and pour over the chickens.
Roast for 10 minutes.
Baste with the liquid and roast for another 20 minutes or until done. (The chickens are done if you prick them with a fork and the juices run clear.)
Serve with pearl barley risotto (see recipe).
