Ingredients (8)

2.00 avocado — chopped
150.00 g feta cheese — crumbled
60.00 ml fresh parsley — chopped
300.00 g pasta — rice
salt
black pepper — freshly ground
2.00 red pepper — sliced, roasted
olive oil — for drizzling

Method:

Place avocado, cheese, parsley and pasta rice in a large bowl and mix well. Spoon into four bowls or place on a large platter. Season, garnish with roasted peppers and drizzle with olive oil.
Serves 4.
