Ingredients (15)

2.00 kg chicken — cut into portions
sea salt and freshly ground black pepper
10.00 ml oil
50.00 ml butter
50.00 ml flour — cake
5.00 ml mustard — powder
400.00 ml milk — hot
5.00 ml wholegrain mustard

250.00 ml cheddar cheese — grated
100.00 ml yoghurt — plain
15.00 ml lemon juice
410.00 g asparagus — tinned
410.00 g button mushrooms
125.00 ml breadcrumbs — dried

Method:

Preheat the oven to 180 °C and spray a large ovenproof dish with non-stick spray or butter lightly.
Heat a heavy-based saucepan and lightly oil the base. Fry the chicken pieces, skin side facing down, until golden brown. Remove from the saucepan and arrange in the ovenproof dish.
Wipe the saucepan and melt the butter. Stir in the cake flour and dry mustard and heat for about a minute, stirring continuously.
Remove the saucepan from the stove plate and gradually whisk in the milk and wholegrain mustard.
Return to the stove plate and heat slowly while stirring continuously until the sauce comes to the boil and thickens. Season with salt and pepper.
Cool slightly and stir in the cheese. Mix until smooth and stir in the plain yoghurt, lemon juice, asparagus pieces and button mushrooms.
Pour the sauce over the chicken pieces and sprinkle with breadcrumbs.
Cover and bake for 20 minutes. Remove the cover and bake for another 20 minutes until the crumbs are golden brown and the chicken is tender and cooked.
