Ingredients (8)

200.00 g dark chocolate
250.00 ml wine — semi-sweet
30.00 ml brandy
5.00 ml vanilla — essence
6.00 eggs — separated
45.00 ml castor sugar
15.00 ml lemon juice
To serve:
0.00 white chocolate — grated and whipped cream

Method:

1. Melt chocolate in the wine in the upper part of a double boiler over boiling water.
2. Add brandy and vanilla essence, remove from heat.
3. Beat egg yolks until fluffy. Add to melted chocolate. Return to heat, then stir over low heat until the mixture just thickens. Remove from heat, cool slightly.
4. Beat egg whites, gradually adding sugar and lemon juice.
5. Fold one-third of beaten egg white into chocolate mixture into remaining egg white mixture.
6. Put into one large glass bowl or 6 individual serving bowls and refrigerate for at least 2 hours. Top with grated white chocolate or hundreds and thousands. Serve with whipped cream.
