Ingredients (13)

100.00 g rice — uncooked
50.00 g sultanas
1.00 celery stalks — sliced into rings
4.00 spring onion — chopped
50.00 g walnuts
50.00 g apricots — dried, chopped
1.00 kiwi fruit — peeled adn sliced
SALAD DRESSING
60.00 ml orange juice
30.00 ml fresh chillies — 573
1.00 garlic — cloves, crushed
2.00 ml ginger — ground
10.00 ml honey
5.00 ml lemon juice

Method:

Cook the rice in boiling salted water until soft. Drain well and mix with the remaining ingredients for the salad. Arrange in a dish.
Mix all the ingredients for the dressing and shake well. Pour over the salad and chill for several hours before serving.
Serves 6.
