250.00 ml rice — cooked
250.00 g bacon — finely chopped and fried
280.00 g flour — self-raising
2.00 eggs — extra-large
150.00 ml milk
30.00 ml butter — melted

Method:

Preheat the oven to 180 ºC (350 ºF). Grease a 18 x 28 cm oven dish or medium-sized loaf tin. Combine the rice, bacon and self-raising flour in a large mixing bowl. Beat the eggs, milk and butter together. Add to the rice mixture and mix well. Turn into the prepared oven dish and bake for about 40 minutes or until done. Cover with aluminium foil if the top of the loaf becomes too dark. This will also prevent the rice on the surface from becoming hard. Serve with butter.
Makes a large loaf.
