Ingredients (11)

200.00 g rice — uncooked
1.00 green pepper — deseeded and diced
1.00 pepper — red or yellow, diced
oil
250.00 ml milk
3.00 eggs — extra-large
15.00 ml fresh parsley — chopped
2.00 ml mixed herbs
2.00 ml coriander — ground
salt and freshly ground black pepper — to taste
50.00 g cheddar cheese — grated

Method:

Preheat the oven to 180 ºC (350 ºF). Spray non-stick spray in a 24 cm ovenproof dish or saucepan with handles that fits into the oven.
Boil the rice in sufficient salted water till soft. Drain well and turn into the bottom of the prepared ovenproof dish.
Sauté the diced peppers in a little oil till soft. Spoon on top of the rice. Mix the remaining ingredients and beat well. Pour over the rice and peppers and bake for 30-45 minutes or till the mixture has set and is done.
Serve with fried tomato, if desired.
Serves 6.
